Baranja's "surduci", roads and streets etched in hill, contain small houses better known as "gators", that have chilly 12 to 15 degrees Celsius temperature throughout the entire year - ideal temperature for storing wine. Burried in the ground, often walled with bricks, gators are a unique architecture of wine cellars. Built over a century ago, today they are a real tourist attraction.
Zmajevac's gators are mainly in road level, although there are some that are underground. On the front part, grapes were crushed and fermented in open barrels, pressed and then transferred into closed barrels. Although the traditional ways are almost entirely gone, gators are still attractive, interesting, and also great for wine storing.
